My #1 Meal Prep Hack to Save Time

Meal prepping – you’ve heard everyone and their mother recommend it for sticking to healthy eating BUT today, I’m sharing my meal prep hack. The reality is many of us fail to meal prep. Some weeks, I’m totally on it. Other weeks, I am proud I made it to the grocery store. You know what I mean? This hack is for those weeks that you have a stocked fridge and pantry but that is about it.

TRADITIONAL MEAL PREP PITFALL: I would argue there are 2 main pitfalls when it comes to meal prepping: time & not having fresh meals

  1. TIME – obviously it takes quite a bit of preparation and time to do a big meal prep, which can be discouraging
  2. LACK OF FRESH MEALS – I really don’t mind reheated meals especially when you learn to prep the *right* kinds of meals but after awhile, I do crave a freshly made meal.

 
MY SOLUTION: mini meal prep each night (dinner x2 = tomorrow’s lunch)
 
MY #1 MEAL PREP HACK
My meal prep hack is actually quite simple and you’ve likely heard me share it before. I make a fresh dinner each night and I double the quantity. Before we sit down to eat, I put a serving in a food storage container to pop into the refrigerator to serve as tomorrow’s lunch.
My husband and I actually enjoy making dinner together. It’s always been one of our things. After a chaotic day, we use that time to forget about work/the day and to chat. As our family grows and when we have older children, I envision this being a family affair… kids helping cut veggies and another stirring the pot (literally and possible figuratively lol).
It’s pretty easy to get in the habit of buying double the amount. I mean you’re used to buying enough for one meal so there’s not difference in thinking x2.
Then, it is just a matter of cooking a bit more, getting it into a container and then you have a wonderful lunch the next day.
 
WHY THIS MEAL PREP HACK WORK
Because you’ll actually do it! I’ve been helping women live healthier lives for quite a few years. I feel like something that sets me apart from others is that I share really practical, useful tips and I know women like CONVENIENCE most. This is a convenience tip!
Yes, I would love to recommend to all women that they should meal prep every Sunday to have healthy options all week long. 
Then I stop and giggle because I myself don’t always do that, so how can I expect someone just beginning their journey or figuring this healthy eating thing out to dive in like that?!
