Chocolate Chip Lactation Cookie Recipe

Never in my life have I had a better reason to eat and enjoy cookies… lactation cookies. As a new mom who made the decision to nurse, one of my top priorities the first few weeks was establishing a strong milk supply. There’s a lot of debate about whether or not certain foods actually support a milk supply but as a first-time mom, I was willing to give anything a try to help! And, did I really need a better excuse to eat cookies?

So, everyone talks about pregnancy cravings and what the pregnant woman is wanting her partner to go get at midnight. Well… the cravings I experienced while pregnant were nothing in comparison to how ravenous I was the first few weeks after having Leo.
I remember eating like 5 cookies while nursing at 3 AM one night. I was laughing as I asked my husband, “how am I still hungry after eating 5 cookies in the middle of the night?!”

Chocolate Chip Lactation Cookie Recipe

Course Sweets

Ingredients
  

  • 2 tbsp flaxseed meal
  • 1/4 cup water
  • 2 sticks unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 1 cup dark brown sugar
  • 2 large eggs
  • 1/2 ripe banana, roughly chopped
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp kosher salt
  • 3 tbsp Brewer's yeast
  • 2 1/2 cups old-fashioned oats
  • 1 cup dark chocolate chips

Instructions
 

  • Preheat oven to 375 degrees.
  • In a small bowl, combine the flaxseed and water. Let sit for 5 minutes.
  • In a standing mixer fitted with a paddle attachment, cream together the butter and sugars.
  • Add in the flax mixture, eggs, banana, vanilla, cinnamon, flour, baking soda, salt, Brewer's yeast and oats.
  • Stir the chocolate chips in by hand
  • On a rimmed cookie sheet fitted with parchment, drop the dough by the tablespoon at least 2-inches apart.
  • Bake for 9-10 minutes, or until golden grown. Let cool on a metal cooling rack.

Notes

Recipe makes about 15 cookies
