HEALTHY & EASY FOIL PACKET LEMON CHICKEN DINNER RECIPE

Introducing….
one of my meal prep simplification secrets. As soon as I find something that
solves our health and fitness needs in the most effective and time-efficient
ways, I’ve got to share it. The foil packet meal is my most recent obsession
because it requires less than 10 minutes of hands on prep!
And
this recipe…juicy lemon chicken on a bed of potatoes and onions! Boom! Major
food win!
Now
for those of you who, like me, thrive off of a meal prep, I have 2 options for
you:
(1) Quadruple
this recipe and reheat leftovers as needed throughout the week
(2) Prep
individual foil packets, store them in an airtight container in the
refrigerator, and pop them into the oven on an as need basis
Feel
free to mix up the herbs! Dill would be amazing and so would rosemary. If you
wanted to completely change it up, you could use lime and cilantro too! No matter
how you pull this together… you’re going to love it.
Ingredients:
1
boneless chicken breasts
1
medium red potatoes, cubed into ½-inch pieces
1
medium red onions, quartered
1
tablespoon olive oil
Pinch
sea salt
Pinch
freshly ground black pepper
Dijon
mustard
Squeeze
or two lemon juice
1
sprig fresh thyme
Lemon
slices for serving

Instructions:
Preheat
oven to 375 degrees.
Toss
the potatoes and onions with the olive oil and salt and pepper in a medium
bowl.
Tear
aluminum foil into a 12-inch sheet. Place
the potatoes and onions on the aluminum foil.
Rub
the chicken breasts all over with dijon mustard. Top the potatoes and onions
with the chicken.
Wrap
the foil tightly over the chicken and place onto a baking pan. Bake
for 25 minutes.
Remove
the baking pan from the oven and very
carefully
peel back foil to expose the chicken.
Turn
the heat up to 400 degrees.
Squeeze/pour
the lemon juice over the chicken breast, and nestle a sprig of thyme into the
potato mixture. 
Bake
for an additional 10 minutes, or until browned.
To
double-check that the chicken is done, insert a meat thermometer into the
center and make sure that it registers at least 165 degrees.
Serve
with lemon slices.
