CREAMY AVOCADO PASTA RECIPE

Nutrition 101: 
{ Healthy Fats + Quality Carbs = Perfect Pairing }
 
We all know the importance of carbohydrates; they serve as major fuel and nourishment for the body! Yet, carbs seem to be a “feared” food group as it is hard to distinguish the good from the bad. The Glycemic Index is a resource that helps determine the overall health of carbohydrates. The GI scale ranks carbohydrate sources on a scale of 0 to 100 based on the extent that blood sugar levels are raised. Generally speaking, a lower GI scale rating is “good” as these are slower digesting carbohydrates, which raise blood sugar and insulin levels more gradually and to a lesser extent that those with a high GI scale rating. 
 
One thing the Glycemic Index does not take into consideration is the fact that carbs are often eating with other food groups, including fats, which are shown to slow the digestion of food overall. Therefore, I like to pair carbs and fats together for slower digestion! 
 
Ingredients:
  • 1 cup brown rice pasta
  • 1 medium-sized ripe avocado
  • 1 tbsp extra virgin olive oil
  • 1-2 garlic cloves (depending on your garlic preference)
  • 2 tbsp cilantro OR 1/4 cup fresh basil
  • 1 tbsp water
  • Juice from 1/2 lime or lemon
  • Sea salt and pepper to taste

*Recipe makes 4 servings

Prep:
(1) Bring water in a small saucepan to a boil and add pasta; cook to preference
(2) Pit the avocado and combine avocado, oil, garlic, cilantro/basil, and lime/lemon in a food processor
(3) Process, adding 1 tbsp of water; if sauce is too think, add additional water at 1/2 tbsp per addition
(4) Mix in salt and pepper to taste
(5) Combine avocado sauce and cooked pasta; pair pasta with a protein option or top with additional veggiesNOTE: my preference is to use basil and lemon juice together or to use cilantro and lime together
