PUMPKIN PROTEIN COOKIE DOUGH RECIPE (+some sassy thoughts)

Yes, you read that correctly… pumpkin. protein. cookie dough. And, it’s healthy! This Pumpkin Protein Cookie Dough recipe that’s become a seasonal favorite of mine as well as some sassy thoughts on nutrition. What I love about this recipe…
It’s high in protein! It’s low in carbs! There is a bit of pumpkin to feel seasonal. There is a bit of dark chocolate to keep it extra delicious.

What I love about the meaning behind this recipe…
Lately, I’ve been receiving more messages than usual in regards to the recipes and meal menus I’ve been sharing. I wanted to address something I think is really important today on the blog.


Warning: read only if you’re into “deep stuff”
When I was in college, I desperately wanted to make a change in my nutrition. My fitness was on point and I enjoyed working out almost every day.
Butttt, I was struggling with food. I would eat super healthy (grilled chicken, broccoli and brown rice type meals). Then, I would unravel. I would eat a pizza, bag of flamin’ hot cheetos, and hot tamales all in one night. I would chalk it up to a treat meal/treat day but in actuality, it was a vicious cycle I was on.
I could keep up a few days of strict, healthy eating then I would indulge for days.
The funny thing was… I was okay with eating pizza, cheetos and candy. I didn’t want to eliminate that; I just wanted to be in a place where I craved a healthy dinner and enjoyed treats in moderation.
Fast forward a few years and I am so proud to share that I’m at that place.
I’ll tell you the one thing that made the biggest difference is that I learned to make yummy meals healthier. I don’t strive for the most healthy meal ever. I just strive for health-IER.
I love pizza. So, I make a healthy bbq pizza on a brown rice tortilla or a pita with chicken, all natural sauce, and just a bit of cheese. It’s healthier than a frozen pizza. The portions are spot on. AND, I’m enjoying. =SATISFIED

I share all of that because I really encourage you to think outside of the box with meals. Healthy eating doesn’t have to be ground turkey, brussels sprouts and quinoa. It can be if you want it to be, but it can also look like my BBQ Pizza!
When we enjoy healthy eating, we will stick with it for results that last. Thattt is my point and the message I always want you to remember.

Pumpkin Protein Cookie Dough Recipe

Course Sweets

Ingredients
  

  • 1/2 cup pumpkin puree
  • 1/2 cup protein powder
  • 1/2 cup coconut flour sifted
  • 2 tbsp natural nut butter
  • 1 tbsp honey
  • 1/4 tsp sea salt
  • 1/4 tsp ground cinnamon
  • 1 tbsp dark chocolate chips/chocolate chunks

Instructions
 

  • Combine all ingredients (except chocolate chips) in a bowl.
  • Sprinkle on the chocolate chips, after well combined.
