Healthier Buffalo Chicken Dip Recipe

When you see “healthier” in the recipe heading, just know it’s going to be a darn good delicious recipe!

Healthier, to me, is all about using naturally lighter ingredients and making healthier food substitutions. I like recipes like this when I host parties with a mix of healthy and not-so-healthy food eaters and when I’m in the mood for a treat that’s on that healthier side.
Neufchatel cheese – it sounds fancy, too fancy for an LG recipe, but it really just refers to the region in France where it is made. Neufchatel cheese is just like cream cheese, except for one huge health benefit… it’s naturally way lower in fat content.

You can find it at all the regular grocery stores. I found mine right next to the cream cheese and it’s made by common name brands like Philidelphia. When I create delicious and somewhat nutritious recipes, I go for options like this as well as Greek yogurt over sour cream.

Okay, enough of the convincing you this recipe is amazing. You’ll see and taste that for yourself!

I N S T R U C T I O N S
Preheat oven to 350 degrees.
Apply a non-stick cooking spray to a small casserole dish.
In a large bowl combine the Neufchâtel, Greek yogurt, 1/2 cup of cheddar, and Monterey Jack.
When fully mixed, add the shredded chicken, buffalo wing sauce, and the whites of the scallions with half of the green tops of the scallions. Stir well to combine.
Spoon the mixture into the prepared casserole dish. Sprinkle with remaining 1/2 cup of cheddar.
Bake for 30-35 minutes, or until golden brown.
Garnish with reserved scallions. Enjoy with celery or other sliced vegetables.

I’m going to leave the food plate section information out of this recipe… this is a healthier treat option to be enjoyed. Know it contains significant fat as well as protein (what a plus!). Enjoy it with celery to keep the snack lighter.
