Single Serve Taco Casserole Recipe

If there is one thing you can count on me for, it’s recipes that are healthier versions of our favorite foods. I thought we would get the Summer Fitcation fiesta started with Taco Tuesday featuring these single serve taco casseroles.

When I come up with recipe ideas, I always think about what will reheat well to work for prepped meals that can be enjoyed all week long. Plus, anything in a ramekin is just so stinkin’ cute!
