HEALTHY, FLOURLESS CHOCOLATE CHIP PUMPKIN COOKIES RECIPE

I often stumble upon delicious looking, “healthy” recipes to satisfy a sugar craving, but then become disappointed when the ingredient list really isn’t healthy. I love that these cookies are flourless and pack a lot of taste into a single cookie while still remaining rather clean!

Ingredients:
1/2 can pumpkin pure
1 egg
2 tbsp raw honey
1 cup oat flour (blended oats)
2 tbsp stevia or other natural, sugar-free substitute
1/2 tsp ground cinnamon
1/2 tsp pumpkin pie spice
2-3 tbsp dark chocolate chips or cacao nibs
Prep:
(1) Preheat oven to 350 degrees F

(2) Mix wet ingredients (pumpkin, egg and honey)

(3) Make oat flour in a blender or food processor, measure out 1 cup after creating flour
(4) Mix dry ingredients (oat flour, stevia, cinnamon and pumpkin pie spice)
(5) Combine wet and dry ingredients, mixing well
(6) Spoon out around 1 tbsp and place onto a greased baking sheet
(7) Press in chocolate chips (or other topping)
(8) Bake for 10-15 minutes (10 min yields soft, chewy cookies; 15 minutes yields crispier cookies)
