Cinnamon Sugar Pumpkin Seeds

Why can’t Halloween be enjoyed all year round?! Pumpkin seeds are a source of healthy fats and seem to be such a treat! These cinnamon “sugar” covered pumpkin seeds are like crack cocaine – you’ll feel like you’re cheating & completely indulging, but as long as you keep the portions under control – you’re not! Enjoy 🙂

Ingredients:
-1 1/2cup raw, unsalted pumpkin seeds
-1/8 cup ground cinnamon
-1/8 cup stevia (or other sugar substitute)
-2 tablespoons coconut oil
Prep:
-Preheat oven to 250 degrees
-Melt 2 tablespoons of coconut oil in a bowl (microwave for about 30sec)
-Add in pumpkin seeds & stir, coating seeds with oil
-Add in ground cinnamon & stevia, stir
-Spread seeds over a baking sheet
-Cook 1 hour, stirring every 10-15 minutes
