Healthy Chicken Noodle Soup Recipe

Ingredients:-brown rice or Ezekiel pasta
-4 celery sticks
-4 carrots
-5-8 parsley sprigs
-1 small onion
-1 teaspoon pepper
-1 teaspoon of minced garlic or 1 clove
-chicken breasts
-1-2 quarts of low sodium chicken broth (see picture – this broth is only 80mg of sodium per cup – other brands, such as Swanson’s “low sodium” aren’t nearly as low)

Prep:
-boil water in large pan and add chicken, leave cook until cooked through (typically 45 minutes)
-allow chicken to cool and shred
-in a separate pot, boil water and cook pasta
-chop carrots, celery, and onion into bite-sized pieces
-combine in bowl, add a little bit of water and microwave for 2-3 minutes until soft
-in a large bot, add chicken broth and heat on low to medium
-add vegetables, seasoning, pasta and chicken
-allow time to simmer

What makes this soup healthy and others unhealthy?
No matter what the food option, you always have to know what to look for as to what makes it healthy or unhealthy. While soup is often low in calories, it is packed with sodium – sometimes more in half a serving than you should have in 2 days! What makes this soup healthy is the low sodium broth, which only has 80mg per cup! Also, I added over a pound of chicken so that with every serving, I am getting in a minimum of 4oz of chicken! Finally, the carb choice (brown rice noodle or Ezekiel noodle) is much healthier than a white pasta or even whole wheat – neither of which are great carbs. I suggest adding pepper and even a sprinkle sea salt if needed!

    What would make it even healthier is if you make your own chicken broth which you can easily do when you are boiling the chicken! Just add some salt and a piece of onion while boiling it. And there is your broth.

    Yes – I have stopped buying chicken broth at the store and instead buy bone-in chicken at the store and use the scraps to make bone broth! Works great and you know exactly what's inside. Not to mention it is more flavorful 🙂
